Instructions

  • Peel and segment the oranges and grapefruit, removing all white pith.

  • Toast sliced almonds in a dry skillet over medium heat for 3 to 4 minutes until golden.

  • In a small bowl, whisk together orange juice, lemon juice, lemon zest, honey, and Dijon mustard. Slowly add olive oil while whisking. Season with salt and pepper.

  • Arrange mixed greens on a serving platter.

  • Top with citrus segments, avocado slices, red onion, feta cheese, toasted almonds, and mint.

 

  • Drizzle dressing over the salad just before serving and toss gently if desired.

Notes

For best results, add avocado and dressing just before serving. Citrus segments and dressing can be prepared up to 24 hours in advance and stored separately in the refrigerator.
