A luxurious twist on the classic Italian Caprese, combining sweet peaches, creamy burrata, and fresh basil for an elegant, restaurant-quality salad.

Ingredients

·         2 large ripe peaches, thinly sliced

·         8 oz burrata cheese

·         2 cups cherry tomatoes, halved

·         1/4 cup fresh basil leaves

·         2 tbsp extra virgin olive oil

·         1 tbsp balsamic glaze

·         Salt and freshly cracked black pepper, to taste

·         Optional: microgreens or edible flowers for garnish

Instructions

1.      Rinse and slice the peaches into thin wedges. Halve the cherry tomatoes and set aside.

2.      Place the burrata in the center of a serving platter. Tear gently to allow the creamy interior to spread slightly.

3.      Arrange the peach slices and cherry tomato halves around the burrata in an alternating pattern.

4.      Scatter basil leaves evenly over the peaches and tomatoes.

5.      Drizzle extra virgin olive oil and balsamic glaze over the salad. Sprinkle with salt and freshly cracked black pepper.

6.      Add optional microgreens or edible flowers for garnish.

7.      Serve immediately.

Notes

·         Use ripe, juicy peaches for the best flavor.

·         Burrata should be at room temperature for optimal creaminess.

·         Assemble just before serving to maintain freshness and prevent the salad from becoming watery.

·         For a seasonal variation, try nectarines or mango instead of peaches.
