Fresh Citrus Salad Bursting With Flavor

A vibrant and refreshing salad made with a medley of citrus fruits, lightly dressed and finished with fresh herbs and crunchy toppings.

Ingredients

  • Oranges – 3 medium (about 450 g / 1 lb), peeled and sliced

  • Grapefruit – 1 large (about 300 g / 10.5 oz), peeled and segmented

  • Mandarins or clementines – 2 medium (about 200 g / 7 oz), peeled

  • Fresh lemon juice – 1 tablespoon (15 ml)

  • Honey – 1½ tablespoons (30 g / 1 oz)

  • Extra virgin olive oil – 1 tablespoon (15 ml)

  • Fresh mint leaves – 2 tablespoons, finely chopped (about 5 g)

  • Pomegranate seeds – ¼ cup (45 g / 1.6 oz)

  • Sliced almonds – 2 tablespoons (15 g), lightly toasted

Instructions

  • Peel and slice all citrus fruits, removing excess pith.

  • Arrange the citrus slices on a serving platter or in a large bowl.

  • Whisk lemon juice, honey, and olive oil until well combined.

  • Drizzle the dressing evenly over the citrus fruits.

  • Sprinkle mint, pomegranate seeds, and toasted almonds on top.

 

  • Let rest for 10 minutes before serving.

Notes

Assemble the salad shortly before serving for the freshest flavor and appearance. Use ripe, seasonal citrus fruits for the best results.
