Oranges – 3 medium (about 450 g / 1 lb), peeled and sliced
Grapefruit – 1 large (about 300 g / 10.5 oz), peeled and segmented
Mandarins or clementines – 2 medium (about 200 g / 7 oz), peeled
Fresh lemon juice – 1 tablespoon (15 ml)
Honey – 1½ tablespoons (30 g / 1 oz)
Extra virgin olive oil – 1 tablespoon (15 ml)
Fresh mint leaves – 2 tablespoons, finely chopped (about 5 g)
Pomegranate seeds – ¼ cup (45 g / 1.6 oz)
Sliced almonds – 2 tablespoons (15 g), lightly toasted
Peel and slice all citrus fruits, removing excess pith.
Arrange the citrus slices on a serving platter or in a large bowl.
Whisk lemon juice, honey, and olive oil until well combined.
Drizzle the dressing evenly over the citrus fruits.
Sprinkle mint, pomegranate seeds, and toasted almonds on top.
