2 ripe avocados, diced
1 cup cherry tomatoes, halved
1 small cucumber, diced
1/2 red bell pepper, diced
1/4 red onion, thinly sliced
1 cup shredded romaine lettuce
1/4 cup fresh cilantro, chopped
1 tablespoon olive oil
Salt and pepper to taste
For the Lime Cilantro Dressing:
1/4 cup fresh lime juice (about 2 limes)
2 tablespoons olive oil
1 tablespoon honey or maple syrup
1 clove garlic, minced
1/4 cup fresh cilantro, chopped

Instructions
Wash and dice the avocados, cherry tomatoes, cucumber, and red bell pepper. Thinly slice the red onion and shred the romaine lettuce. Place all the vegetables in a large salad bowl.
In a small bowl, whisk together lime juice, olive oil, honey (or maple syrup), minced garlic, and chopped cilantro. Season with salt and pepper to taste.
Pour the dressing over the prepared vegetables. Gently toss to coat everything evenly, being careful not to mash the avocados.
Transfer the salad to serving bowls, garnish with extra cilantro if desired, and serve immediately.
