Ingredients

·         Couscous: 1 ½ cups

·         Water: 1 ½ cups

·         Olive oil: 2 tablespoons + ⅓ cup

·         Salt: ¾ teaspoon total

·         Cherry tomatoes, halved: 1 ½ cups

·         Cucumber, diced: 1 large (about 1 ½ cups)

·         Red bell pepper, chopped: 1 cup

·         Red onion, finely diced: ¼ cup

·         Fresh parsley, chopped: ½ cup

·         Fresh mint, chopped: ¼ cup

·         Kalamata-style olives, sliced: ½ cup

·         Feta-style cheese, crumbled: ¾ cup

·         Fresh lemon juice: ¼ cup

·         Garlic, minced: 1 clove

·         Ground cumin: ½ teaspoon

·         Black pepper: ¼ teaspoon

Instructions

1.      Bring water to a boil, add salt and olive oil, stir in couscous, cover, and steam for 5 minutes. Fluff and cool.

2.      Prepare all vegetables and place them in a large bowl.

3.      Whisk lemon juice, olive oil, garlic, cumin, salt, and black pepper.

4.      Add couscous to vegetables and toss with dressing.

5.      Fold in herbs, olives, and feta-style cheese.

6.      Let rest briefly before serving.
