  • 1 ½ pounds (680 g) sirloin or ribeye steak
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 pounds (900 g) sweet potatoes, peeled and cubed
  • 3 tablespoons unsalted butter
  • ¼ cup (60 ml) warm milk
  • ½ teaspoon sea salt
  • ¼ teaspoon ground cinnamon (optional)
  • 1 cup (150 g) green beans or broccoli
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2 tablespoons beef broth
  • 1 teaspoon Dijon-style mustard

Instructions

  1. Boil sweet potatoes in salted water for 15–20 minutes until tender. Drain, mash with butter, milk, salt, and cinnamon.
  2. Season steak with olive oil, salt, pepper, garlic powder, and smoked paprika.
  3. Sear steak in a hot skillet for 4–5 minutes per side. Rest, then slice.
  4. Toss vegetables with olive oil, salt, and pepper; warm if needed.
  5. Simmer beef broth and mustard in the steak pan for 1–2 minutes.
  6. Assemble bowls with sweet mash, steak, vegetables, and drizzle.

  • Let steak rest before slicing for best texture.
