A light, vibrant mango salad tossed in a fresh lime dressing, perfect for a quick and refreshing bite.
Ripe mangoes – 3 large (about 900 g), peeled and diced
Fresh lime juice – 3 tablespoons (45 ml)
Lime zest – 1 teaspoon
Extra virgin olive oil – 1 tablespoon (15 ml)
Honey or maple syrup – 1 tablespoon (15 ml)
Fine sea salt – 1/4 teaspoon (1.5 g)
Fresh black pepper – 1/8 teaspoon
Fresh cilantro or mint – 2 tablespoons, finely chopped
Red onion – 1/4 small onion (about 30 g), thinly sliced
Cucumber – 1 medium (about 200 g), diced
Dice the mangoes and place them in a large bowl.
Add the diced cucumber and thinly sliced red onion.
Whisk lime juice, lime zest, olive oil, honey or maple syrup, salt, and black pepper in a small bowl.
Pour the dressing over the salad and gently toss to combine.
Add the chopped herbs and toss lightly again.
Serve immediately or chill briefly before serving.
Use ripe but firm mangoes for the best texture.
