A refreshing, creamy, and crunchy salad that comes together quickly and tastes even better after chilling.

Ingredients

  • 2 large cucumbers (about 500 g / 1.1 lb), thinly sliced

  • 2 medium carrots (about 200 g / 7 oz), grated

  • ½ cup (120 g) plain yogurt

  • 3 tablespoons mayonnaise

  • 1 tablespoon lemon juice

  • 1 teaspoon honey

  • ½ teaspoon garlic powder

  • ¼ teaspoon black pepper

  • ½ teaspoon salt

Instructions

  1. Thinly slice the cucumbers, sprinkle with salt, and let sit for 10 minutes.

  2. Pat the cucumbers dry to remove excess moisture.

  3. Grate the carrots and place them in a large bowl.

  4. In a separate bowl, whisk together yogurt, mayonnaise, lemon juice, honey, garlic powder, and black pepper.

  5. Add cucumbers to the carrots and pour the dressing over the top.

  6. Toss gently until evenly coated.

  7. Chill for 15–20 minutes before serving.
